Mediterranean Roasted Vegetable Flatbread

A light and crispy Palermo’s PINZZA™ flatbread is brushed with garlic olive oil and topped with a blend of Mediterranean roasted vegetables then baked. Finished with crumbled feta and a drizzle of balsamic glaze for a bright, savory balance of roasted flavor, creamy tang, and subtle sweetness.

Ingredients

  • 1 each 4×10 fully cooked Palermo’s PINZZA™
  • Garlic olive oil (for brushing)
  • 1 ½ cup roasted vegetable (tomato, red onion, zucchini)
  • 2 Tbsp crumbled feta (finish)
  • 1 Tbsp balsamic glaze (finish)

Instructions

  1. Place PINZZA™ on a pizza screen or pan.
  2. Lightly brush the surface and edges with garlic olive oil.
  3. Evenly distribute roasted vegetable blend across the flatbread, leaving a small border.
  4. Bake at 475–500°F for 3–5 minutes, until the crust is hot and crisp and vegetables are heated through.
  5. Remove from oven and finish with crumbled feta and a light drizzle of balsamic glaze.
